CUMBERLAND HARBOUR  OKTOBERFEST  2021
We here at Cumberland Harbour are all looking forward to our monthly get-together to celebrate Oktoberfest.
It will be a great night of German food, live music and catching up with new and old friends!
New Lighting at the Amenities Center
Since two of our three pools are now heated and we will be approaching the fall and winter seasons when we start losing daylight earlier, new path lighting has been installed to add ambiance as well as make it easier to navigate the path to the Fitness Center, Spring House and pools.
DATE ANNOUNCED FOR ST. MARYS ANNUAL SEAFOOD FESTIVAL
If you are considering a visit to St. Marys for a Discovery Tour, come the weekend of October 9th when the St. Marys Kiwanis Club hosts their 48th Annual Seafood Festival (previously called the Rock Shrimp Festival).
According to the “Visit St. Marys” website, there will be a 5K and 10K run, a themed 10 a.m. parade featuring floats, fire trucks, tractors and golf carts.  There will be seafood concessionaires as well as entertainment, demos, arts & crafts, vendors and much more!
The best part of the day will be the food!  Local restaurants will be offering seafood specials as well as food trucks and vendors with great seafood fare.  The Festival is located on the St. Marys waterfront in the historic district and exemplifies a small-town feel to visitors and residents alike.
Proceeds from the Festival are spent locally to fund Kiwanis Youth Programs in Camden County.

EGGS BENEDICT ANYONE?
While we’re on the subject of food, this past Labor Day weekend I hosted my family for the weekend, seven people, four dogs, and one 5-month old.  Needless to say it was a little hectic!  I found a delicious and easy recipe for breakfast that everyone loved.  I love breakfast recipes that you can assemble the night before and finish off the next morning!  I hope you enjoy it as much as we did!
Interesting fact from my Canadian co-worker.  As we discussed this recipe, she told me in Canada, Canadian bacon is called, “bacon.”  What they refer to as Canadian bacon is peameal bacon.  You can Google it!

Eggs Benedict Casserole

Servings: 12 Servings

Cook Time: 50 mins
Refrigerate Time: 12 hrs
Total Time: 13 hrs 10 mins
This eggs benedict casserole is an overnighter. It’s super easy and delicious. It makes me want to douse every casserole ever in hollandaise sauce.

Ingredients

  • 6 English muffins
  • 12 ounces Canadian bacon, chopped
  • 8 eggs
  • 2 cups 2% milk
  • 1 teaspoon onion powder
  • salt and pepper to taste
  • 1/4 teaspoon paprika

For the Sauce

  • 4 egg yolks
  • 1/2 cup heavy whipping cream
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 cup butter, melted

Instructions

  • Split the English muffins and chop them into one-inch pieces. Spread the pieces on an ungreased baking sheet and broil for 1-2 minutes, or until bread is toasty on top. Use a spatula to flip the bread over, then broil for another minute or two.
  • Place half of the Canadian bacon in a greased 9×13 baking dish; top with broiled English muffins, then the remaining bacon. In a large bowl, whisk the eggs, milk, onion powder, and salt and pepper to taste; pour evenly over the top. Cover and refrigerate overnight.
  • Remove from the refrigerator 30 minutes before baking. Sprinkle with paprika. Cover and bake at 375° for 35 minutes. Uncover; bake 10-15 minutes longer or until the center is set.
  • In a double boiler or metal bowl over simmering water, constantly whisk the egg yolks, cream, lemon juice and mustard until mixture reaches 160° or is thick enough to coat the back of a spoon. Reduce heat to low. Slowly drizzle in warm melted butter, whisking constantly. Serve immediately with casserole. You can drizzle it over the whole pan or portion the sauce on each plate.
